Recently, Bobby invited Hudson Valley Living for an exclusive culinary immersion crafted by his chef. Dish after dish demonstrated meticulous technique, artistic presentation, and a sophisticated interplay of flavors that elevated each course to something impressive.

It began with a transcendent Burrata—an opulent orb of cream-laced perfection accompanied by a symphony of textures: crisp prosciutto, lush fig jam, roasted peppers, and delicate crostini atop vibrant greens drizzled with olive oil. It is an essential starter.

Next came the Chicken Martini: a panko-parmesan–encrusted cutlet, pan-seared to golden luminosity, resting beneath a silken lemon-butter and dry vermouth sauce that harmonized exquisitely with pasta and vegetables.

Equally impressive was the seafood risotto—an indulgent seaside medley of mussels, clams, calamari, shrimp, salmon, and mahi-mahi folded into a velvety blush sauce, each bite layered with depth and refinement.
